How to unlock the That's Definitely Not A Knife achievement in Call of Duty: Vanguard - Definitive Guide
At the end of this mission you will be ambushed by the Stuka plane along with a bunch of enemies, use any type of weapon to damage the plane. Keep on doing this and eventually an enemy with a Panzerschreck will spawn. This achievement only requires you to get the last hit with either a Pistol or Bazooka, I wouldn’t recommend trying this with a grenade. I tried looking around for another Pistol in this area but couldn’t find one as I swapped it out earlier. There’s a few ammo boxes in this area with infinite ammo in them.
I got this on Veteran difficulty, but it would be easier on Recruit.

I was actually able to find a pistol from one of the enemies that arrived on the second truck

A guy in the second truck dropped a rocket launcher for me on this one.

This is a very finicky achievement.
As the description says, this is obtained in the mission ‘In the rats of Tobruk’ which is the 4th mission. After you destroy 3 tanks a plane called the Suka will spawn in and continuously fly over you until your shoot it down.
Surprisingly, the easiest way to do this is actually with a pistol rather than a rocket launcher as no rocket launchers in the WW2 era have lock on tracking.
The pistol I used was the one I started the mission with which is the magnum/revolver. At a guess I would say it took about 20 bullets of this revolver to bring the plane down and unlock the achievement.
I did it on veteran and the plane didn’t kill me once so it’s fairly easy it’s just a matter of hitting your shots when the plane flys straight over you. There’s ammo boxes in the area if you run out of ammo.
The link below shows me completing it (sorry it’s on Twitter I couldn’t embed it into this guide)

Mission 7: Rats of Tobruk
You start the mission with a pistol, keep it with you until you need to take down that plane, which is at the end of the mission. You can also get rocket launchers from some enemies or grenades but funnily enough, it's easier to attempt this trophy with a pistol.
At the end of the mission, you'll have the objective to take down a plane. Keep shooting at it with your normal weapons, after a while some enemies will spawn in the area and they will carry MG guns, kill them and pick up their gun to deal great damage to the plane. When the plane starts to burn, switch to your pistol and shoot at the plane when he's coming at you. After a couple of attempts, the plane will explode and as long as the final shot was from a pistol your trophy will pop just fine.

Mission 7: Rats of Tobruk
At the very end of this mission, a plane will fly overhead, and you'll be tasked with taking it out. For this achievement, you need to deliver the killing blow with either a pistol, grenade, or rocket. Take note that you can damage the plane however you like, but you need to finish it off with one of these three weapons.
The only way to have a pistol for this fight is to bring it with you from the start of the mission. If you remember to do so, use the pistol for this achievement. More on that later. Grenades are simply not an option for this achievement, because the timing is too absurd to ever get it right and succeed, so don't even waste time trying to hit a plane with a grenade. Lastly is a rocket, which is the second best option. With the plane flying around, damage it a bit with bullets and eventually enemies will show up in two trucks right into the middle of the area. Kill them, and two enemies will drop Panzerfausts. Grab one.
Now, whether you have a pistol or a Panzerfaust, know that there is an ammo crate right at the base of the tower in the middle of the area. This crate provides infinite ammo for both the pistol and the Panzerfaust. On top of that, it doesn't appear that the plane can actually kill you. When it comes in for a gunning run, even on Veteran it'll damage you a lot, but you'll fully heal before its next run every time. As a result, you essentially have unlimited attempts at this (enemies no longer spawn after the two trucks that show up). With the pistol, it's relatively simple: unload at the plane when it flies over you to shoot you, and eventually you'll hit it enough to bring it down. With the Panzerfaust, you should only need to hit the plane once to bring it down. Just know that you really need to lead the plane by quite a bit for the rocket to hit it. It's difficult to tell, when you miss, if you overshot it or undershot it, but assume you didn't lead the plane enough and try to lead it farther next time. You'll eventually land the shot, and this achievement will unlock right after the plane crashes.

The easiest way to shoot down is with a pistol taken from the Germans - it has a larger magazine and a higher rate of fire than a six-shooter revolver (its icon is in the lower right corner on the screen).
No matter how hard I tried with the rocket, I couldn’t hit it in advance.
I can’t even imagine how this can be done with a grenade.
Although in the video guy (en) the guy first hits with a machine gun, then finishes off with a revolver.

Bring the plane to a “burning state” and only then shoot from the pistol.
I got the trophy this way, and shot from the revolver that was given at the beginning of the level.

At the very end of the mission, a Junkers will dive at you; you need to shoot him down with your choice of pistol/grenade/bazooka. The bazooka will be “brought” to you by German reinforcements in trucks. As I did: I “wounded” the plane with a machine gun so that smoke would pour out of it, then I guessed the moment to shoot with a bazooka. Got it on the second try. Timing is important here; you need to study the time and height from which the plane attacks you. The easiest way to do it is with a pistol (but at that time I no longer had it in my inventory), since the weapon from the last hit counts.
