Key to winning the duels is dodging bullets.Once you master that, it's easier to kill the solo opponents and more importantly you can defeat the opponents that come in duos or trios.
Dodging goes way easier when your gun is pulled out, because time slows down.
If you manage to dodge 6 bulllets in a row, there's another achievement in it for you
The Secret Achievement achievement in Call of Juarez worth 52 pointsContinue playing to unlock this secret achievement
AND your opponent needs to reload his gun, which leaves him vulnerable for more than enough time to kill him.
The manner in which you pull your gun affects your aim. If you pull your gun fast and aggressively your crosshair will swerve and it will take some time to focus. Try to find the balance in being quick and precise.
In short:
1. Learn to dodge in the first couple of duels with a drawn gun.
2. Find the balance between being quick and precise.
3. If in the later duels it gets too hard, pull out your gun at 2 or 1 seconds left. You character will protest a bit, but your gun stays out. Then it's spray and pray.
