How to unlock the Hatman achievement in Call of Juarez - Definitive Guide
This one gave me a lot of trouble, and none of the solutions I have seen even remotely worked. Here's the solution that works.
Whenever you shoot hatted enemies in the level, use concentration mode and aim for the brim of the hat. Do not aim for the head itself, as it will usually count as a headshot and not a "hatshot". You want to aim for the brim to the left or right of his head, and the reticle will turn red when aiming. If done properly, the hat will fly off of the guy's head and he will not die. You may follow the hatshot immediately after with a headshot, even while still in concentration mode. (Headshots where the hat flies off may count, but I found that many of my headshots, even near the edges of the hat, did not blow off his hat.)
It does not matter which types of hats you shoot -- I got this achievement very early in the level and did not shoot a single bowler cap.

Can confim this. Has nothing to do with Bowler hats, just shoot the brims of any hat, achievement unlocked.

I'm almost positive that headshots where the hat flies off do not count. Unless you're saying that the game is inconsistent on this point and they sometimes count, rather than expressing uncertainty. If that type of thing counted, I would've had 6 long before I did.

This can be kind of tricky. The best way to do this is to zoom in on an enemy with a hat on, and shoot the side of the hat to knock it off his head. You may get credit if you kill them with a headshot that knocks the hat off, but I didn't get the achievement until I knocked the hat off two enemies without killing them.
