The Ranger's Quests.
All fishing challenges found at each challenge board.
They Rank from Bronze to Gold and I believe there are 5 challenges for each rank and a total of 4 outposts and 4 challenge boards.

Most of the challenges were easy enough to complete and I am no pro fisher by any means... let alone a pro gamer lol.

Also, for advice on catching the Emerald Plateau Bronze Challenge 2 (Golden Trout) use hook size 10 or 9 and you will finally catch the 1 fucking golden trout in that body of water.
