There are 158 total characters across all titles to complete. At any time from the main menu you can check your completed status by going to Fighter Awards and pressing Y to see each titles progress, as well as how to use each games secret character.

That was a rather useful tip to point out about the "Fighter Awards" option on the main menu. I didn't know when starting the game the first time that you can press the button to access the Player Progress Page. From there, you can use and to change titles and see which characters you still need to complete each game with. I just assumed the achievement tracker would display progress but this way is honestly better.
As mentioned, the Fighter Awards menu also includes progress for hidden fighters ("???") and alternate endings for games such as Red Earth. While under the Progress Page, if you don't know how to select a hidden fighter, simply highlight them and press to learn how. In addition, while navigating these menus, you'll be congratulated each time you complete a game with its entire roster.
Lastly, one of the most time-saving tips about this achievement is knowing when the game counts a game as complete for a character. This is vital for deciding where you want to make a Quick Save to reload and quickly beat the game with another character right at the final boss. Basically, you simply lose to the boss then make a Quick Save at the character select screen; then just beat the boss and Load Quick Save and beat the boss again with the next character. So when does the Progress Scanner count the game as beaten with a character? Well for most games like Hyper Street Fighter and the Darkstalker titles, you can just use "Load Quick Save" or quit out of the game the moment you reach an ending for a character. But for some games such as Red Earth or Cyberbots, you might need to let the entire ending play out until you get to the Game Over screen for the game to count the game as complete for each character. Like Super Gem Fighter, these are the same games that also start you over from the beginning if you switch characters after losing to the boss of said game, so be aware of that when going into this achievement to avoid wasting time.

I can confirm for Cyberbots, you do NOT have to sit through all the way to the end to the Game Over screen for the mechs. For the Pilots you do have to, but for the mechs, once you beat the final opponent you can quit out if all you need to finish are the mechs.

I mostly want to focus on the hidden characters. Most characters are automatically available in every game. Some games does offer EX option for some hidden characters across the games. For example, both Huitzil & Pyron in the original Darkstalkers weren't originally playable. But on left side of the character selection either up or down will be the boss characters.
For hidden mechs, it doesn't matter which pilot & mech you chosen. Among selecting any mech quickly press either up, up or left, left or down, down or right, right. If done correctly your previous selected mech will be replaced by one of the hidden mechs. Both Shadow & Marionette in Darkstalkers games have a similar method to play as them.
Both requires high lightening the random select slot then press start five times for Shadow or seven times for Marionette. Akuma in Hyper Street Fighter II is located above Ryu in the character selection screen. Akuma in Super Gem Fighter Mini Mix is left of Ryu there. In the same game, Dan is located right of Ken. Akuma in located beneath Hsien-Ko.
Dan is located beneath Donovan. Devilotte is located beneath Morrigan. Some alternate versions of Darkstalkers characters requiring holding start but hitting different attack buttons. How do I chose Dark Talbain in vampire saviour? I've literally pressed start/menu with every button and can't get it to work. What exactly do I need to press?

You hold start then press one of the attack buttons quickly. You could make a quick save state on character selection to try out every combination. You should get him soon though. For some reason Dark Talbain isn't in the other versions.
