Once you get to Piper Farm in the Marshes, you'll see some pumpkins on the farm. Approach one and use Skelly Jelly on it, and some Jumpkins will spawn.
Record one and the achievement is yours :)

I think I may have hit a glitch on this one. Did this first thing today when I woke up, been rolling up mountains all day, achievement still hasn't popped. All others I got today did pop, so who knows.

This guide fails to mention that if you do not have any Skelly Jelly, walk over to the raised bridge with the purple jelly on the bottom of it. Hit X to interact with it, and defeat the Rogue Fusion to get the jelly. After that, apply the jelly to a pumpkin.
