How to unlock the The Cursed Simon Belmont achievement in Castlevania Anniversary Collection - Definitive Guide
This game doesn't have a password system like the others so I'll offer a few tips and post videos for the last two boss fights.
Holy water is your best friend in this game, you can stun bosses indefinitely with it if you have a 2x or 3x power-up with it. Medusa, Mummys, Frakenstein and the Grim Reaper are all cake with it.
Make sure to whip walls to find food to get some of your health back, there's more than enough to keep you topped off.
Lastly, if you want to make it easier on yourself use the save feature often.

I'm curious, do you (or does anyone else) know if these achievements can be unlocked while playing the Japanese versions of the games? Because the Japanese version of CV1 has an "easy mode" that would make this one muuuch easier.

I just beat the JP version on normal last night and did not unlock the achievement for beating it, so I'm guessing the Japanese versions do not count.

As the trophy says, you must complete the original Castlevania. There are 18 stages in the game with 6 total boss encounters. Beating a boss will reset the clock and give an item that will completely heal you.
The default controls for the game are:
Move right
Move left
Crouch/Use stairs
Use stairs
/ Jump, use or to jump at a diagonal
/ Whip
+/ Use items
