Day 3 from 21:15 to 22:00. Kind of the middle of the night. Once you see Daniel and Anna leave (the couple) talk to him right away, as he doesn't have much longer.
Day 4 from opening to 21:00. He's the next person to leave after the creepy twins, so he should be the first person you talk to that night.
Day 5 from 21:25 to 22:20. He enters about halfway through the night, and will leave at last call right before Catherine comes in. Once Justin (the reporter) leaves, Morgan will be leaving next. Answer to his question: "If I have to choose, yes."
Day 8 from 21:00 'til closing time. You can't miss this one, as you are allowed to linger as long as you desire.
You also need to talk to him each time you see him on the landing during the nightmares (he won't show up until the 4th level). He is the "Sheep with Police Hat". Just be encouraging here; the answers should be obvious. But let me know if there's one you aren't sure about.
NOTE: I am 99% certain I gave a "wrong" answer or two at the Stray Sheep, according to the wiki, and still popped all the helper achievements. I include the answers so that you can be on the safe side, but you may very well be able to answer however you like. If you have confirmation of this, please comment. If you want to be safe, answer as posted above.

This achievement is unlocked for helping Morgan, a patron at the bar. To help him through his problems, you must answer a series of conversation choices with him a certain way, both in the Stray Sheep and on the Landings. Morgan can be found at the Stray Sheep starting on the 3rd Day. He usually sits at the first booth to the left of where Vincent and his buddies sit. Be sure to have a chat with him and be comforting in your replies. Morgan also appears at the Landings as a Sheep with a Police Hat so speak with him there too or else he may end up on the news as a victim of "Woman's Wrath". Morgan only appears at the Stray Sheep on the 3rd, 4th, 5th, and 8th Day. If done correctly, on the 8th Day he will show up at his usual booth claiming that he plans to avenge his wife's death and thank you for saving him from himself. This will unlock after he thanks you. Morgan is one of the patrons you will meet in the bar. To unlock this patron trophy, it will be completely dependent on your conversation choices you make with him. Morgan will start to appear in the Stray Sheep Bar on Day 3. He will be sitting at the booth to the left of the one where you normally sit in with your friends.
You will want to ensure each day you are having a conversation with him, and replying with only positive answers. During the platform sequences between Nightmare Stages, Morgan will be identified as the “Sheep in Police Hat”, so you’ll also have to always talk to him in these areas as well. If you have successfully helped him out, he will appear back at the Bar on Day 8 in the very same spot you always find him in, the booth to the left of your usual booth. Talk to him again, and he'll thank you for helping him "clean up his mess".
