It's not just faucets, either, FYI. Turning on the shower counts as well.

To turn on a faucet (tap), simply swat at the faucet using r2.png or l2.png. Do this 5 times for this very easy trophy.

This achievement requires you to turn on five sinks cumulatively across all runs. You may do this inadvertently while playing in Goals mode, but if not, almost every level has a bathroom with a sink to turn on. Levels such as Apartment and Modern Home are good picks since you can turn on the sink in the bathroom and the one in the kitchen. Replay levels to grind out if needed.
