When you get to the tab where you can choose your opponent, choose Friend and select the friend and hit start.

This one can be a pain in the ass. I have 2 friends who have this game. The first one already played the game, and I was able to go to the online menus and issue a challenge, which got me this achievement. The reason I bring this up was because a second friend purchased the game so we could play it together and we weren't able to send each other a match request.
It seems to be able to issue a challenge to a friend, they can't just have the game in their library. They have to at least play a game before you'll have the option to challenge them.

Go to Single Game, New Game and under the second settings page, go to Opponent and choose Friend. Underneath, your friends with the game will be listed. Choose one to challenge and the trophy will pop. You don't need to play the game.
