How to unlock the Underpromote achievement in Chess Ultra - Definitive Guide
This can be done in tutorials. On the 7th page, 1st selection, called Pawn Promotion. Move the pawn forward one using the D pad and it will ask to promote it. Choose anything other than Queen. You will fail the tutorial, but the achievement will unlock.

My game refuses to let me promote to anything but a Queen. If I select K, B, or R it just goes back to the board until I select a Q.

I had the same issue, but only within a real game; Matt's solution worked fine

Load up a game against the computer on Novice
Once you get your pawn to the other side of the board, you can choose the option of:
1) Queen
2) Rook
3) Bishop
4) Knight
Just choose any option that isn't Queen and the achievement will pop

This trophy can be got by going into the Tutorial and doing the Pawn Promotion tutorial. During the tutorial, you'll be instructed to move your pawn to the far side of the board, and then to promote the pawn.
Instead of choosing Queen, choose something else, and you'll unlock this trophy. You'll fail the tutorial, but it's a very quick one.

To promote a pawn, you have to reach the opposite side of the board with a pawn. This can sometimes be easier said than done, as there will be fewer pieces due to this being a late-game strategy, your opponent won't usually let you promote a pawn as you can use it to get a second/replacement queen.
Chess is too complicated of a game to provide a walkthrough that doesn't require a friend who is willing to throw a match for you so that you can get this achievement. When you're at the point where you're selecting an upgrade for your pawn, resist the temptation to go for a second/replacement queen and select one of the other options from the piece selection and you'll unlock this achievement.
