This is pretty easy to do if you can find some unshielded ships, just press 
when your target is in range. There should be some unshielded ships in mission not long after you escape from the shrine.
This will teleport you behind them where you should be able to destroy them within 5 seconds with your gatling gun on normal difficulty mode.

I would add that you can just get any ship down to very low health, then use B to leap behind it for an easy pop.

Can be done on Easy, which lowers basic enemy ship health enough that they can be easily killed after a jump.
