very early on you will have to complete quests given by the indicated sheep that involve clouds. all you have to do is use LB to split the clouds and then drag them back together to rejoin them. each newly split or joined cloud counts as a separate different cloud for this achievement. if you wait until your cloud is big enough to rain, you should be able to split it all down to many little clouds and repeatedly build it back up to knock both these out easily.

This will also most likely come naturally as you go for Adventurer.
As the clouds roll by, you can move them, poke them, combine them, split them, make them rain, and make them shoot lightning. Doing any of this things will count as “touching” the cloud. Touch any combination of clouds 100 times to unlock the trophy.
You will need to form rain clouds to grow grass and create drinking water puddles for the sheep. If they do not have food or water, they risk the chance of dying, so you will need to constantly touch clouds to make it rain.
