the trampoline is unlocked early on by completing the quests you get when clicking on the indicated sheep. after you increase your space twice you can place sheep on the trampoline. they will bounce a few times on their own and eventually jump off, but you can click the trampoline to keep them bouncing.
this does not have to be done with the same sheep, or all in a row. it is a cumulative count of every bounce made on the trampoline with any sheep. the quickest way seems to be setting them down and letting them do their low quick bounces until they stop, and then setting them right back on each time. if you try to place another sheep on at the same time they will bounce off.

A bit of a misleading title. You don't need to let one sheep jump 100 times. It's cumulative and counts ALL the sheep jumps. Don't stress about this, it will come naturally. The trampoline is unlocked naturally with story play and you can build new ones once they break.
