Coffee Talk Episode 2: Hibiscus and Butterfly

There are 55 special drinks that are unlockable and can be reviewed from your Brewpad (on your phone).

Three of these drinks must be unlocked during specific parts in the story. You'll need to play at least one play through and get all of Riona's, Jorji's and Lucas's drink orders right, as all three of them give you the chance to unlock a special drink. Also, keep in mind that the order of each of the drink's ingredients matters.

It's unclear if Blue Pea Latte is a "special drink", being it's uniquely named, but it isn't in the Brewpad that I can see. To be safe, you can always add it anyway, recipe calls for Blue Pea, Milk, Milk
