To go from level 0 to level 100 you need to catch 1494 items from the water.

Every time you catch something in the water fish, object or armor, you get 1 xp. Fishing power doesnt afect xp gain but, you can fish faster whit more skill buy when you level up. Fishing in any type of water and lava will always give xp.

You can use any fishing rod and any type of armor the only thing that will change is where you can fish.

So as you level up you want to catch some item for later :

if you want 200% speed achievement you need to catch the mercenary bandage in azeroth wilderness.
You also have the scarlette drill in azeroth wilderness for mining faster and gaining more mining xp.
You can also find a legendary card by fishing in the desert of begining for the oracle deck.
And finaly you need to catch the starlight nautilus in some lava. (200 fishing power and solariterod for lava)

Note: in the 1.0 the mini game that you have to do is completely gone making fishing faster and less frustrating.

Fishing is another basic skill that grants us 1 xp per catch. It doesn’t matter what we catch, where we catch it, or what fishing rod we use to catch it (although certain fishing rods only work in certain waters, so keep that in mind). This is one of the pure grinds of the game where we just need to do the activity. Our build should focus on fishing speed. So we simply need two goldfish rings, to increase how fast we catch fish, which can actually be acquired from fishing in the waters of the Forgotten Ruins. And we can also craft some Spicy Bait using Bomb Peppers from our garden at a Bait Workbench to further increase our speed for catching fish. The rest of the build doesn’t necessarily matter as long as we have high enough fishing to fish in whatever area we choose to grind in.

As we level up, we have to put points into Improved Bait, which again increases how fast we catch fish. Then, because we are using bait, we’ll want to unlock Angler’s Advantage so we can then unlock Chewy Bait to increase our chance to keep bait after fishing with it, that way we don’t have to craft as many and can use more of our garden to focus on cooking.
