How to unlock the C1 | A Hidden Gem achievement in Crash Bandicoot N. Sane Trilogy - Definitive Guide
The earliest this achievement can be unlocked is after completing the level 'Lost City' on island 2. Complete the level by collecting all 82 boxes without dying (Except in the bonus levels) to unlock the Green Gem, then head on back to 'Jungle Rollers' on island one and you can now follow the Green Gem path.

To confirm: you can die in the bonus round. You just can't die in the main level.

If getting all of the crates without dying in any of the color gem levels is too daunting for you, you can actually get this achievement without any of the colored gems even though the achievement description explicitly says you need one.
When I did this I had 3 normal (silver) gems but I'm speculating that this will probably work as long as you have at least 1 normal (silver) gem.
The level right before the final fight with Neo Cortex is a level called "The Great Hall". It consists of 1 jump to the end of the level. In the gap for the one jump is a gem platform as long as you have at least 1 of the normal (silver) gems. If you land on the platform and let it take you to the right the achievement should pop there as it did for me.
If anyone notices some specifics of this working or an official minimum number of normal gems (silver), let me know and I will update the guide accordingly.

As soon as I went one the first gem (and fell to my death) the achievement popped so I can assume you only need one regular gem to get this.

You don't actually need to earn a coloured gem to get this achievement. If you can get to the penultimate level (The Great Hall) and earn at least the first clear gem in the game, you can start the hidden path to the secret ending. Step on the first clear gem in the path, the one that's moving between the exit and the hidden path, to unlock the gem.
If you want to get this earlier in the game, colored gems can be earned on The Lost City (green), Generator Room (orange), Toxic Waste (blue), Slippery Climb (red), Lights Out (purple) and The Lab (yellow), whilst gem paths can be found on Jungle Rollers (green), Castle Machinery (green), Upstream (orange), Rolling Stones (blue), Cortex Power (blue), Jaws of Darkness (blue), Native Fortress (red), Road to Nowhere (red), Boulder Dash (purple), the Great Gate (yellow) and Lights Out (yellow). To unlock the coloured gem, complete the required level without dying. Then go to the level/s that gem is required for and find the gem path for the achievement.

Refer to C1 | The Ultimate Gem Path (70G) for earning all gems, including the six Color Gems. Once you have a Color Gem, this achievement unlocks once you play a level with that Color Gem in it and use it to reach a new path. You'll be required to do this to get all of the regular gems in the game.
