In this video guide I will show you how to complete all the crystal challenges. Can be done on easy. The characters I would recommend to use would be the all around ones in case you have problems making some turns or over turning. For the first four tracks I did them in adventure mode to get the CTR tokens.
Now for the rest you will need to go into local arcade and select the crystal challenge mode. From here you will have extra maps for the CTR side and need to do the CNK ones as well. Once you finish the last level you need the achievement will pop. There are a total of 12 maps. I will have them listed below and timestamped.

Blows my mind that of the 2 guides for this, neither of them mention anything about if they have to be done on a specific difficulty. :(

They don't. All the achievements on this game call out if there is an extra condition (difficulty) associated with it.
