How to unlock the A Thousand and One Night achievement in Crusader Kings III - Definitive Guide
While there is quite a good chance for this to happen randomly at any grand wedding, provided none of the spouses is homosexual or asexual or already has a different soulmate, the most reliable way to accomplish this is orchestrating your own player character's grand wedding and selecting the "seduce" intent with your betrothed as the target. Don't mind the wording, your spouse won't become your lover instead of your soulmate by picking this intent and they won't get the fornicator trait by getting impatient and sneaking off to do it in the closet before the wedding ceremony, they are scripted not to do it before the wedding night phase.
(By seduce intent I mean the intent that you can chose during the wedding event instead of the default recreation intent. Don't start a regular seduce scheme on them before the wedding, that could actually ruin the achievement. Obviously this only helps if it is your own wedding, trying to seduce the bride during the wedding of your relative would be counterproductive to the spouses becoming soulmates ;-)).
The likelihood of the spouses becoming soulmates is influenced by the same factors that would influence a regular romance scheme, so make sure she already has a positive opinion of you before the wedding by using sway or gifts on her or even befriend her, if your character has access to that scheme (diplomacy skill tree). Also, have a look at your future spouse's personality traits when you arrange the marriage and don't pick one who has traits that will make them hate you (like compassionate vs arbitrary or sadistic, just vs arbitrary, honest vs deceitful, gregarious vs shy, eager reveller vs temperate, forgiving vs vengeful, craven vs. brave, paranoid vs everyone, etc.). Last not least, your character should have a decent diplomacy skill, since the seduction intent will trigger events with diplomacy skill checks.

one or both of couple is homosexuality or asexuality will never be soulmate. So check your character and your wife or husband sexual orientation. But even both character are heterosexuality not 100% be soulmate. So you may need to try several times.
