How to unlock the Faster than the Fox achievement in Crusader Kings III - Definitive Guide
I got this first time and it was fairly comfortable but there's a few tricky things to navigate.
In 867 start as Haesteinn who is listed under the Great Adventurers tab when you start a game. Don't forget to turn on Iron Man mode. The description doesn't say it but you need to complete this before the year 1047.
Note that for this achievement you need to own every county in the Sicily Kingdom - not just have the Kingdom title. We're aiming to do this before the first ruler dies but I've built in some safety decisions in case yours dies.
Upon game start, pick the Martial life focus to boost your army effectiveness.
Take the maximum amount of Concubines and as you start gaining children, betrothe them to other ruler's children based on "Alliance Power" as you'll need some good allies for future battles. Generally aim for allies that have 1000+ armies.
The first thing I did was to start a varangian adventure to move to Napoli. You do this by declaring war on the leader and selecting the Varangain Adventure Casus Belli. This will give you some special troops and once you win (very easy) you basically move to that region as your new capital.
Now you want to work towards conquering some neighbouring duchies. You can do this easily as Vikings have Casus Belli which allow you to conquer any region. Start off by taking the regions that aren't part of a larger kingdom. You should be able to get the 9 counties you need to form the Kingdom of Sicily.
Form the Kingdom - this will help if your ruler dies but more importantly unlocks a decision you can take called "Adopt Special Succession Type". Again, this is for safety, it allows you to "elect" a person to gain most of your titles if you die.
Eventually the final regions that you have to get will belong to the Italian Kingdom and Byzantine Empire which are a lot bigger than anything else you've faced.
For the Italians, you should be able to manage with just your troops and your allies. If you need extra bodies you can hire a mercenary company or two. For the Byzantine Empire, you want to time your war so that when they are already engaged in two or three other wars, declare war on them. It is likely that they won't be able to dedicate enough troops to beat you.

The x-box achievements often get the description of the achievements wrong in this game, always look up the in game achievement descriptions, they are the correct ones. Contrary to the x-box description, you neither need to be tribal government nor norse culture to get this achievement, you just need to start as and stay as Asatru religion. I conquered Sicily after I already had formed the North sea empire for the Canute the Great achievement (forming the North sea empire automatically turns you and all tribal holdings in your realm feudal) and I had become Danish due to the "fate of the Northmen" event in the 950ties, which forces you to become the new culture if your primary title is either Denmark, Norway or Sweden unless you control more than 80% of the Norse counties at that time.
If you just go for the "Faster than the Fox" achievement, using a Varangian adventure war to get into the Mediterranean area early is certainly faster than the way I did it, but it was super easy to do after I had founded the North sea empire. I had already begun to carve my way through the pagan eastern Europe during the 30 years you have to hold the 3 kingdom titles before you can found the North sea empire. After I had the empire founded (which also gives your character a huge boost for your levies), I went on to conquer Thessaloniki for that other Viking conquest achievement, then took the duchy of Epirus in a second war against Byzantium to get close enough to Southern Italy to get the conquest casus belli against them, then went on to conquer Sicily.
