How to unlock the Lions and Tigers and Bears, Oh My! achievement in Crusader Kings III - Definitive Guide
To get this achievement, you need to capture a large predator animal alive.
Employ a capable master of the hunt to get more sightings of game.
Hold a regular hunt in a county with a predator sighting. It doesn't necessarily have to be a lion, tiger or bear, I got the achievement with a lynx, even though the European lynx is neither very large nor very dangerous. Foxes obviously don't count, but I'm pretty sure wolves do, as would any other local bigger predators like e.g. panthers in India. Big herbivores such as elks won't work even if their peril rating is high.
Adjust the settings for the hunt to maximize success chance. When given the choice whether to ambush or corner (=ride after it and attack it in melee) the animal, choose the latter. If you succesfully corner the animal, pick the option "I want it alive". There is a risk that one random member of your hunting party gets wounded or killed in the process.
The option to catch the animal alive doesn't always pop up. I'm not sure whether it depends on your hunt success chance, your hunter trait experience or is simply random. I had reached trait level 1 (experienced hunter) in venator and had a hunt success chance of 80% when I got the achievement. I had picked the "slay beast" intent, but I don't think that mattered, because catching the animal alive actually makes you fail that intent.
