Choose any fighter and keep spamming the A button. You'll do short, minimum damage punches, but every 9th or 10th the screen will say "Critical" so you'll know you're doing it right. If you get hit down, and you probably will, just get back up and keep spamming A.

It appears that these achievements need to be done against a single opponent, and they are not cumulative over all fights. As a result, you'll want to do minimal damage with each hit to avoid killing your opponent too quickly. The easiest thing to do is to start up a King of the Hill fight on Glassjaw difficulty (difficulty must be set in the Options menu before choosing this mode). Choose any character, and then just hold towards your opponent and mash 
. Critical hits happen randomly, so you'll going to have to just punch them over and over and hope/wait for them to happen. You should unlock both achievements by the end of the second round, though.
