Once you finish Story Mode you will be level 16/17. By the time you finish Career mode you will be level 30 (you need to be 30 to unlock the last stage of career mode anyways) If you are a tiny bit of xp away from unlocking a certain stage in Story or Career mode then once you win 10 King of the Hill matches in a row for that achievement you should be good

To reach level 30 you’ll need to obtain 50,800 experience points in total. You’ll easily amass this amount while working on the other trophies, so you won’t have to go out of your way for this.

Level 30 is the highest rank in the game, and you make progress towards it from each mode you play. Playing through and completing the Story Mode in the base game will get you close to level 15. You'll then need to play and complete all of Career Mode for the base game too, and there is more than enough XP in this mode to reach level 30. Unfortunately, for me anyway, there was a small gap where I didn't have enough XP to reach the next chapter in Career Mode despite having completed everything to that point. If this happens to you, simply replay the final fight in the final chapter of Story Mode, which gives you thousands of XP and should ensure you have enough to access the remainder of Career Mode without issue.
