If you are just searching for him, the update added new options in the
accessibility tab, including one to freeze time on crusades, so this helps.
He only shows up randomly on combat rooms. The first encounter is scripted so there is no way of missing it.
You need to encounter him first at darkwood forest, after stealing your coins, he will be gone. After that you need to encounter him in Anchordeep, he will steal your coins again. And finally you can find him in Silk Cradle, where you can beat him up. (and get almost nothing back, like 2/8 of your stolen money)

I have encountered Midas the first time in Darkwood just fine, but since then I have lost count of how many times have gone through Anchordeep and have not come across him or had him spawn :/

This achievement is practically story related with this DLC. When going back through Darkwood, the first area, you will unavoidably come to a room where you'll meet Midas. He will steal a huge amount of your Gold and then disappear. Later, when you access Anchordeep, the third area, and work your way through it, you will once again unavoidably come to a room with Midas, and he will again still most of your Gold. Finally, once you work your way through Silk Cradle, the final area, you'll find Midas for the third and final time. Once you find him, you now need to attack him over and over. He'll drop Gold (although it's a pathetic amount compared to how much he likely stole from you) for a while, so you'll need to hit him probably around ten times. Once he stops dropping gold and looks all beat up, this achievement will unlock. It actually had around a ten second delay for me, so just be aware of that.

PS4 version of the game, there is a bug with the appearance of Midas. Midas first appears in the Chalice location, then in the Swamp, then in the Silk Cradle.
