As of patch 1.5 (February 2022) there is a total of 160 fast travel dataterms throughout Night City.
Pre-patch information:
There is a total of 150 fast travel dataterms throughout Night City. The achievement unlocked for me having found 120 – 123 fast travel dataterms.You do not need to interact with each dataterm individually to unlock it. You just need to be in the vicinity of each and it will show on your mini map. All dataterms can be found while driving and without leaving your vehicle.
Pre-patch information:
* If your achievement tracker gets stuck, interact with one of the fast travel dataterms and back out. Doing this should fix the achievement tracker.

Detracting nothing from Metal Crushers solution, which helped me a great deal until the patch broke / fixed the tracker.
I found the below interactive map that allowed me to tick off up to 100 locations for free. There are 150 data terms in Night City. I wouldn’t bother checking off the Bad Lands data terms as it will be obvious if you have them or not. This will allow you to save your 100 for those that are crammed together in the centre of the map.

You’ll just need to drive / walk by the data term for it to register, might be an idea to have the achievement tracker open whilst you’re going for this to make sure it’s registered.

The map is great, but not complete. I think the 10 new fast travel points added in 1.5 are missing.

At the moment on Patch 1.5 there is a world bug due to which 1 badlands fast travel point is missing in game.

If you are talking about the one close to the "T-symbol" on the map in the eastern badlands, then it is not an issue. this fast travel point is moving when certain story events are done and can be found north of the long street to the northwest of the former spot. the name is
I was just able to unlock it but stumbled upon this one, too. I had 1 missing and could not find it. In the end, it was the most southwestern one called border checkpoint, south of the huge biotechnica area.

As of patch 1.05, there are now 160 fast travel dataterms and you need to find all of them. They appear with a blue icon on your map whenever you are close to them, you do not need to interact with them, just walking/driving close to them to make them appear on your map is enough. Note that, despite the achievement description explicitly saying to find all dataterms, you do NOT need to find all of them for this achievement. You only need to find most of them. Once you're close enough, they automatically turn on and become usable without you needing to do anything. This is in stark contrast to other open world games where all fast travel points are marked on your map even before you've enabled them, allowing you to travel to inactive ones to activate them. Additionally, there are a massive amount of fast travel points in the city, which is handy to be able to travel near to where you want to go, but can make tracking all of them down a nuisance, since there's no way to tell where you're missing any. However, by the time you complete all gigs and NCPD hustles in all areas, which is required for all achievements, you should have come across enough dataterms to unlock this achievement. Running/driving from hustle to gig to hustle as you complete everything on the map for achievements will activate plenty for this achievement. I unlocked the achievement well before finishing all gigs and hustles.
