Stealth mode is a level of difficulty unlocked by completing the nine setlist tracks (the ones with 4-5 songs together one after the other)
you start off with the first three (Novice selections) which unlocks the next three (Veteran selections) which unlocks the last three (Grand Master) one you complete the last three you unlock stealth difficulty which now is an option on all other songs
from there you choose any song (ideally one you are proficient in) and then dance without cues
I recommend as you will likely be going for

The 20-Song Difficulty Level Master achievement in DanceMasters worth 84 pointsClear any 20 songs at all difficulty levels.
The 30-Song Difficulty Level Master achievement in DanceMasters worth 137 pointsClear any 30 songs at all difficulty levels.
that you do a run of all the other difficulties (master is optional) first before going for stealth this means you will have had 3-4 run though getting to know the moves a little better
