This one is cake.
After acquiring the ability to really fly with the jetpack (Episode I, Chapter VI):
Simply go from in-flight mode to hover by pressing A. Approach your target by facing them, and try to time your touchdown so that you land within a step or two.
Then just hit B to melee.
Only have to do it once, easy 15G.

Simply hover near an enemy, turn off your jet pack, and melee the enemy. You can achieve this anytime after you acquire the jet pack in the Spare Parts chapter. The trophy unlocks immediately after correctly performing the action.
