Very simple to complete. Just go into Single Player->Training Mode and select your character and the one to train against. Now press the Start button and choose the Recording Mode option. It should pop right away.
As a note, make sure to not have a second player controlling your training opponent, as it blocks Recording Mode otherwise.

This wouldn't work for me, the "recording mode" option was greyed out and unselectable until I set the training dummy to be computer controlled and to jump repeatedly. For some reason this activated the ability to turn on reocrding mode.

Interesting. Didn't even know you could do Training Mode with another player, but it's worth adding to the solution. Thanks!
