If you HOLD BLOCK and SPAM THE RIGHT TRIGGER you can get a perfect defense 99 out of 100 times (also a great way to rack up those finishing moves). This little trick is truly overpowered when you mix it with other ability cards. Like creating an explosion when perfect blocking and healing when perfect blocking.
(You can also do this with dodging, but I am simply sharing a very simply trick to do it with blocking)
Update: You will not start with the ability to block. It will be unlocked automatically through playing. Each character will get it at different times. For example, block will be the very first unlock for her. Other characters will not get block until you reach level 10.

You don't get the ability to block until a little further into the game. Keep playing. It will be the first ability you get. (edit: Whoops, seems I was wrong. It's the first ability for CARLA, but other characters will get it later in the game, I think level 10 is the latest it will unlock depending on who you choose)

You will unlock the ability to block through natural progression through the game. (Different for each Slayer) Once unlocked make sure you equip the skill card in the character menu.
In order to perform a perfect defensive move you need to hit the guard/block button right before a zombie is about to hit you. You will know you did it correctly because the zombie will be stunned right after.
I found these easiest with the Runner zombies but I just recommend trying this on the easier/basic zombies in the game. (walker, runner, etc..)
You can track how many you have in the combat challenges under "Perfection" challenge.

This involves timing a block with at just the right moment to stun a zombie, sending them reeling backwards. You’ll know when you’ve done this properly to standard zombies, as a button prompt will appear for grabbing and pummelling them up close. For Apex Variant zombies, a defensive counter will still knock them back and temporarily daze them, so mastering this is actually pretty crucial. You’ll probably end up doing this hundreds of times, so 25 isn’t really a tall order.
