How to unlock the I Read Every Move achievement in Dead or Alive 5 - Definitive Guide
This will come naturally, as eventually you will beat an AI or another player without taking any damage. If you can't wait for that, go to the Fight option in the main menu. Select Arcade or Time Attack on the lowest difficulty. You cannot earn this achievement in Survival, because it isn't divided into rounds and matches.
Use Christie for the best results, as her attacks are weak but fast. The AI doesn't attack very often, and they'll almost never counter your attacks with a Hold. Just spam the punch button and you'll have it at the end of the first round.
You only have to win a single round without taking damage, earning a Great finisher. The achievement will pop at the end of the round, as opposed to the end of the match like with most other achievements.
Alternatively, you can go into Versus and earn the achievement there. Set the AI to the lowest difficulty, the maximum health to "smallest," and one round in either Solo or Tag. You should probably do Solo, but it works in Tag as well. This method allows you to pick your opponent, rather than letting the game decide who you fight.
Special thanks to Metamania2313 for pointing out the Versus method.

I found it easier to just keep pressing A to throw him to the ground, then when he gets up you grab him and throw him back down. I didn't have to back off at all.

I found the easiest way to do this was, just play a versus match and use a second controller. Just beat down the second player for an easy 20G.
You need to win one round without taking damage. An easier way to do this is by fighting the AI on a lower difficulty and hoping they don't counter you or land a hit.
The easiest way is to have a second controller, set up a versus match between two players and beat up on the second player.
You will hear the announcer say "Great!" when you meet the requirement for unlocking the trophy.

For this trophy you must win a round without taking any damage (the game will prompt you with a “Great!”). This may happen naturally assuming you have proper spacing with the Leifang method to grind out all the courses in Arcade mode however if you want it right away you can go into versus mode to make this easier and use a second controller to get the perfect this way.
