How to unlock the Brute Juke achievement in Dead Space 2 - Definitive Guide
In the chapter 10 "same area in the video post by UndertakerAndre" when the brute jump out, just run back to the door !! the brute can not cross the door so he turn back and you can shot him in the front and in the back with your favorite weapon !! enjoy
When it gives out he will get up and start shooting exploding organic bombs at you from his chest. Catch the first bomb with telekinesis and fire it back at him. While he is stunned switch to the line gun and shoot its alt-fire mine at his feet. From here just continue to play pitch and catch with the bombs and replace the line gun mine at his feet whenever it detonates. He will not move anymore and, as long as you don't fail to catch one of his bombs, cannot damage you.
If you're struggling with the bombs use more stasis to reduce the number of bombs he can launch in the time it takes to kill him. If you get hit by a charge attack during the first stage, restart the checkpoint, which will be just prior to his jumping into the transport hub.

I personally think that this would be the easiest brute to get the achievement on. You hopefully have upgrades to some guns and your stasis module.
You will be in a large rectangular room at the very tell end of the level (comes after fighting a large number of guys on the two catwalks above this room.)
There is a BLUE STASIS container in the room. When the brute attacks, launch the container at it. He will now be frozen for what seems like half a minute(exact duration of container unknown to me)
Using the detonator mines, launch them at the brutes feet. should take 6-8 mines without upgrades and 3-4 mines fully upgraded. either way this brute can be killed before it regains movement. if it does come out of stasis, one blast from your stasis module should give you enough time to launch the last mine(s).
alternatively: use 4-5 contact beam shots to one arm.

Difficulty: Any (Zealot relates to this strategy)
Weapon used in this strategy: Ripper (No upgrades - it will do surprisingly great)
Ammunition: About five Ripper Blades (Number relates to upgrade state)
Statis Packs: 0-3 (only one needed if Stasis is fully upgraded; None needed when Stasis Canister is used)
Strategy: Move in front of the Brute and get into combat with it. In combat use Stasis on it (about only five times). Cut on the yellow infected flesh of its body continually until one limb is off. Yeah, it is dead - and that efficiently brought down!
Alternative use of Stasis: A special Stasis Canister can be found in this area (To the right of CEC door). Target will remain frozen for 57 seconds on hard contact.
Additional chances: In Chapter 10 you will encounter two more Brutes. In Chapter 13 you will also encounter one Brute in single combat. You may be even more powered up and even greater equipped when you are there. This may leave you another, and more simplified options of accomplishing this.
I was playing on Zealot and was getting tagged at least once in the fight. So drop the difficulty down to easy.
As mentioned in the other guides do this in chapter 6 when you meet Ellie again , this is right after the school.
Now if you have some detonators quickly mine from the back where he jumps down to the door where you entered and stay there and let him charge, he will run right at you and through the mines ;) 3 or 4 should take him down before he is even close to you.
As insurance stasis him and blast him from range between mines.
I was also able to take him out just using stasis and javelin's and it's alt fire shock think before he got to me.
Remember this is just to get the achievement, so quit to the menu and reload if you were playing on zealot !!!!!!!
You will have your first real fight with a Brute in Chapter 6 when you meetup with Ellie and Thross. He walks around with his two huge hands like a Gorilla (not to be confused with a Tripod!), has a running charge attack and his weakspots are the 2 areas between his left and right shoulders and body. Focus on 1 area only, wait for him to charge, run sideways then turn around and Stasis him and use the Plasma Cutter, Line Gun, or better yet a charged Primary attack from the Contact Beam. Once you break one of his limbs the fight becomes much easier as you can then stand from afar, wait for him to spit one of the mines and use Kinesis to grab it and throw it back, otherwise finish him with your gun. Be careful not to any damage during the fight, restart from last checkpoint if you do.
If you missed this opportunity, there are 2 more encounters in Chapter 10, one after the other, and a final encounter in Chapter 13.

You will encounter your first Brute at the end of Chapter 6 in the "Transport Hub". This turns out to be extremely easy to complete on casual. Grab the stasis canister in the room and wait for Ellie and Stross to finish talking on the balcony above you. The Brute will jump down near the Transport Hub sign. Launch the stasis canister at the Brute and use your plasma cutter to dismember one of the Brute's arms. The arm should fall off before he even exits stasis. Once the arm is off, the Brute no longer charges, but will spit bombs out of its chest. Hit it with your own stasis and shoot off the other arm. Even easier, the Brute can be killed in one shot on lower difficulties with the Line Gun's alt-fire. Hit him with the stasis canister and then plant the mine at his feet. If he starts to come out of stasis, hit him with your own stasis and bam, one shot kill.
