How to unlock the Gap in the Market achievement in Descenders - Definitive Guide
Mini-bosses, or mini-boss jumps as the are usually referred to in the game, are special jumps or obstacles that only occur in some levels (randomized). Choose tracks that have a high stunt rating to have the best chances of having a level generated with one or more mini-boss obstacles.
Each world has its’ own unique mini-bosses that range in difficulty. Keep your eyes out for these landmarks and obstacles on the track in each world:
Highlands: Castles, ruins, and wooden ramps that jump over boulders
Forest: Wooden planks over rock pits and ramps that jump through wooden watchtowers.
Canyon: Wooden platform held up by scaffolding and jumps over windmills
Peaks: Towers with fire at the base and ramps that link to a short wooden walkway above a building
Most are fairly simple to complete, and an orange text description will pop up on screen when the mini-boss is successfully done.

During each stage of a course there are certain areas you have to jump or ride over. Stick to the main path and you'll get them over time. Side note you can go over the same ones if you restart.

this achievement is also glitched and stuck at 80% for me

This is a bit of a hack, but surely a tip as it gave me the last successful mini-boss for me pop this achievement: some of the min-bosses look like a jump ramp facing a finishing ramp that faces it oppositely, from the side looking like _____/ \_____. In my tenth mini-boss, I encountered this one, jumped okay, but not so well/fast because I landed on the ground below the finishing ramp. I landed successfully before I hit the back of the finishing ramp and crashed. But the landing must've been successful enough because this achievement popped right before I crashed. So it seems like you just have to do enough of the mini-boss before crashing for it to count. I think that's the only reason that I popped this achievement because I'm no good at this game and surely died on more mini-boss ramps than fully completed them in my full time-span of playing this game.
