Can be done on Mission 14 - Las Piedras
On the right side of the tracks just before the area with all the cattle will be a tower. There will be a guard on it and a wooden Assassin's Creed style beam sticking out of it. Simply climb to the top of it and jump off in to the wagon of hay below. An Assassins Creed eagle sound will play and the achievement will pop.
