The key to getting a three-star rating on these missions is draining the highlighted vehicles that are marked on the map. I found that focusing on this can net you the three-star rating with a good chunk of time remaining.

Turnipseed Farm is an easy place to do this, but you can do this on any of the challenges.

If you mash the Y button you will drain the vehicles faster, this helped me out bunch once I realized this.

I'm having real trouble getting the drain beam to work/pick up the correct thing. Any tips please?

Mashing the button is SO fast, great tip! I used Left Trigger then hovered over the target and mashed Y, got 3 stars with over 40 seconds left on the clock in the Turnipseed Farm Armageddon.

Button mashing Y once the yellow target marker has focussed is a top tip.
