Iron Wolves are mercenaries available for hire in Act III at the camp of Kurast Docks specifically from Asheara in the "north west" part of camp at the end of the docks in a house past Ormus.

*Caution, as SonnieSlim noted in the comments as a reminder, remove any gear on a current merc before hiring a new one as you will lose any of their equipped gear when replaced.

They typically cost 1k - 3k to hire depending upon the merc's level. However, you can get one for free at the completion of the quest Blade of the Old Religion.

To do this quest, you must have first completed the quest The Golden Bird. Afterwards, speak with Hratli in the "south east" part of camp to activate it. Then when exploring the Flayer Jungle, you need to locate the Gidbinn (it will show up on your mini map as an icon). Once you interact, a pack of Rat Man led by a unique will attack you. Killing the unique gives you the blade which you take back to Ormus in Kurast Docks. Then talk to Asheara and the merc can be hired for free. Even if you already have a merc employed, you can dismiss them by hiring an Iron Wolf and it won't cost any gold.

The following taken from Diablo.Fandom.Com. The Iron Wolves were formed by Asheara, a mercenary who was disillusioned by the brutal tactics of the mercenary companies she had previously served with. She formed the Iron Wolves as a company that answered to her, one that would be held to a higher standard.

In 1264, the Iron Wolves were stationed in Kurast. The group spent months combating the demons that prowled the jungle that had overtaken much of the area, but they just kept coming (granted, this allowed the mercenaries to make a good living off the steady stream of conflict). Some measure of salvation came from a group of heroes who had crossed the Twin Seas in pursuit of the Dark Wanderer. The heroes were able to retrieve the Gidbinn, which reinforced the enchantments that protected the Kurast Docks. Because of this, fewer Iron Wolves were needed to protect the area, and a few volunteered to help the heroes free of charge.

Kurast fell despite the efforts of the Iron Wolves and their allies, and Caldeum became the new capital of Kehjistan. The Zakarum church hired the Iron Wolves to retrieve the country's new ruler, Hakan II, from his home in the northern reaches of Sanctuary. With this task complete, the Iron Wolves became the child emperor's bodyguards, elevating the group to a level of power and influence unheard of for a mercenary company.

A few years later, and a few months before the coming of the Fallen Star, refugees began arriving at Caldeum; fleeing from the Borderlands as the Coven and their summoned demons wrecked havoc. The Iron Wolves were sent out in the desert to fight them, while the Imperial Guard was created to “protect” the citizens from the refugees. Eventually, the Imperial Guard supplanted the Iron Wolves' former role. The tenets of the Iron Wolves were studied by Belial's servants in an effort to understand their martial methods.

Some Iron Wolves remained in Caldeum, though lost contact with their breathren in the Borderlands. The Nephalem was instructed to head for the Khasim Outpost, where they found Iron Wolves taken captive there, intended to be sacrificed for Belial. The Nephalem freed them and defeated the demons.

When Belial rained fire down upon Caldeum, the Iron Wolves did what they could to evacuate its populace.

A few months after Belial's defeat, the Reapers attacked Caldeum (along with much of Sanctuary). Tyrael and the Nephalem held faith the Iron Wolves would be able to defend the city, just as they had done so against Belial.

CAUTION - As you are going for these achievements make sure to remove any gear you don't want to lose from your current mercenary. You will lose it when you hire a new one.
