You must buy at least one of each of them. It doesn't matter what item you get. You can check your progress by pressing Start and going to Challenges.
Where to buy:
.::ACT 1::.
NEW TRISTRAM, Tashun the Miner (first vendor you see).
He sells: Axe, Sword, Gloves, Boots, Chest, Waist, Legs and Shield.
NEW TRISTRAM, Arghus the Collector.
He sells: Wand and Bracers.
NEW TRISTRAM, Radek the Fence.
He sells: Bow, 2-Hand Crossbow, 1-Hand Crossbow and Ring.
FIELDS OF MISERY, Wandering Tinker
He sells: Spirit Stone
.::ACT 2::.
HIDDEN CAMP, Silmak the Fence.
He sells: Quiver, Fist Weapon, Helm, Shoulders and Neck.
CALDEUM BAZAAR, Tilnan the Collector.
He sells: Dye, Staff, Spear, Mojo, Magic Source (Known as Wizard Source) and Ceremonial Dagger.
CALDEUM BAZAAR, Lugo the Miner.
He sells: Dagger and Mace.
CALDEUM BAZAAR, Squirt the Peddler.
She sells: Spirit Stone, Daibo and Polearm.
.::ACT 3::.
KEEP VENDORS
They sell: Spirit Stone
THE KEEP DEPTHS LEVEL 1, Ironsmith Aldonado.
He sells: Mighty Weapon.
Special Notes:
Spirit Stone - This is different from the PC version. Now, vendors in towns will sell Spirit Stones very rarely. For those who don't know, Spirit Stones are the unique Monk HEAD armor (originally I thought they were off-hand for whatever reason).
As well, be aware that these items can be bought from any vendor. Try to keep track of what you need and always check vendors when you encounter them. Spirit Stone and Mighty Weapon are the two rarest ones and if you see one, you should do whatever you must to spend your money on this.

I gave up on farming the Wandering Tinker for a Spirit Stone after over an hour on various difficulties. She always had one normal helm.
BUT.... I just bought a rare Spirit Stone from Squirt the Peddler in act 2 town (Inferno difficulty). So she can sell them.

You must buy one of every item type, from any number of merchants. They don't need to be any particular item quality, and you can sell them back after you've bought them. As with other challenges, you can also do this across multiple characters.

The list of items is constantly changing - please take into account ATTENTION: the spiritual stone is a HEADDRESS...what you have already purchased can be viewed in tests

I’ll add a hint, the Spiritual Stone is a headdress for a Monk, sold almost everywhere, you don’t need to look for a hat with the name “Spiritual Stone”, just buy any hat for a monk

If you have problems with a Spiritual Stone or a Powerful Weapon, go through all the acts; ordinary sellers should have these things.
I received these two items in Kaldea (act 2) from the Jumper and the Merchant next to the gate to the palace.
