The last throwdown I unlocked was also different from the last one they unlocked.

From what I've been able to determine, they get unlocked when you beat the person hosting the showdown (e.g. Gate Crasher Clash, Simon Sherwood, appears in Rally Raid: Redeemer). It's the way it worked here. Annoyingly, you don't see who is actually in it, until the end of the race.

Just got the chievo after completing 79% of the career events. Haven't played any of throwdowns

There are 13 throwdowns that are unlocked by completing a predetermined (though not defined in game) number of the various event types in the career. They are located in the next tab over from the career events (). They are all 1v1 events but you don't need to complete them at all, just unlock them. The last event will unlock towars the end of the career. As long as you are completing all events, this trophy is unmissable.

This trophy requires you to have unlocked all 13 Throwdown events in the game. Note the wording “unblock everything”. This trophy doesn't actually require you to complete any of these events. This will happen over time after completing Career Mode. This trophy will unlock in Chapter 5, Red Zone. Unfortunately, there are no requirements in the game regarding how or when these events are unlocked, however all thirteen are unlocked in Chapter Five.
