Select any Stage you're comfortable with driving (I went with the shortest route in Spain).
Set the AI difficulty to 1 (Very Easy).
Enable Hardcore Damage in the Event/Championship Settings.
Once you've finished the Stage and continued on to the next you should make Achievement progress.
You may also want to combine this with some of the other Achievements for Custom Events, so that you're not repeating Events too often.
