Stars are awarded in several ways: by completing feats and adventures in Toy Box as well as completing specific tasks in Play Sets. Each Play Set has 30 stars you can earn and can be checked by pressing Back and going into the Mission Log. Press right to go to the "Gold Star Missions" tab and you'll see a list of feat-like missions that will earn you one gold star when completed. You can also get extras by completing easy Feats in Toy Box such as "Place 5 Flowers", "Customize a track" and "Do a trick in Reverse". Each gold medal you earn in adventures also nets you three stars.
However, I suggest that you merely get the Play Set missions, as you'll need them for the following achievement:
