How to unlock the It's All Gold! achievement in Disney Infinity - Definitive Guide
There are many adventures that you can choose from, and each character has their own unique one. The three I used were Mr. Incredible's, Sumo, and Castles & Slingshots.
In Mr. Incredible, you need to destroy 3 domes before the clock runs out. Each dome has a number on it that indicates how many times you need to hit it. When enemies swarm you, use a ground pound (A, Y) and knock them back, then hit the dome. For bigger Omnidroids, move around to the other side of the dome if you can.
In Sumo, you need to stay on a platform of blocks for 3 minutes. Enemies of all kinds will swarm you, but just use one move, over and over again: ground pound. It keeps you in the air out of the line of fire, and knocks enemies off the edges. Just be careful toward the end, because there won't be many blocks left, and you can land right on one that's disappearing.
Edit: Chimpotle noted that if you play as Violet (not included) you can go invisible and camp in the middle. Nice!
In Castles & Slingshots, there are many balls hidden behind 3 castles made out of Legoesque bricks. You need to hit 3 with your slingshot in a minute. This is kinda luck based, but if you do it enough, you'll stumble on them. When I got gold in this, the 3 balls were literally lined up next to each other on the same platform (I finished the mission with 5 hits). The key is rapid fire. Don't wait for the shot to hit, just keep pulling your LS back and flinging them. You'll need to throw a bit farther at times, of course, but you can clean up a lot of blocks at the beginning by just flinging lots of shots quickly.

i believe all characters have the same adventures except the first one, which is always specific to the character in use.

If you have Violet, Sumo is even easier as you just go invisible and make sure you stand on stable blocks. Pretty much just camp in the middle until you begin to get close to 3 minutes.

Depending on which characters you own, this can be a very simple or not so simple Achievement.
The Sumo Adventure can be completed effortlessly by Violet since she can turn invisible. The enemies don't react to her, even if you bump into them while she's invisible. You can pick up a ranged weapon and use it on them, they STILL won't react to her. Just don't fall off for 3 minutes and you'll get the Gold on this Adventure.
Vanellope's Sweet Ride is Vanellope's character adventure. It's a simple 3 lap race. Finish it under the posted time and you get another Gold.
Rapunzel's Rail Ride is Rapunzel's character adventure. It's a simple adventure, just ride on the rails and collect the lanterns.
Another easy one is The Lone Ranger's Justice Run if you have his figure or bought that play set pack. However I would NOT recommend Tonto's Flight because of how long it takes and how annoying it is.

If you are good at Racing games, there are 3 races to complete. All three are fairly easy and shouldn't take you more than a few attempts.
These are the mini-games for Disney Infinity. Get the gold medal on 3 different ones to complete these 3 trophies. The easiest are: Castles and Slingshots, Sully's Paintball challenge (requires Sully to be on the base) and Sumo.
