You need to collect specific 'shards' to first unlock a defender character, in order to get to level 3 you'll need at least 65 shards, 10 for level 1, 20 for level 2 and 35 for level 3.
This is much easier if you go for a Defender in whatever current season is running at the time. All you have to do is concentrate on season races and check the store daily for any shards.
You'll also get loads of shards from the related limited events, use the season box coins and credits to open season boxes and universal boxes from the store, also check the daily freebies for more upgrades.
Once your Speedster has three stars just jump into any basic limited event where you can use them and win.
*Note this achievement can be a bit buggy, so you may have to wait a while for it to unlock or try winning another race.

The game splits Racers into four separate classes - Speedster, Trickster, Brawler and Defender. The biggest distinction between these classes are the power-ups available to each Racer during a race.
Defender class Racers have power-ups and abilites centred around defending themselves from other racers' attacks. This trophy can be earned using any Brawler, but you will need a total of 10 and then 35 Shards after unlocking them to raise them to a 3 star rating.
This trophy can be earned in either single player or multiplayer. Once you win a race with a racer at a high enough level, the trophy will unlock during the results screen.
