There are great solutions but the easiest I found was the first tutorial match, you got to beat the first guy then they will start to teach you how to catch, once there change the difficulty so that you do 5% damage and start catching the ball then throwing it at the blue guy until you get 10 catches then the achievements will pop
This could be done in any number of fights during the game, but a great spot that I did it is during the side-quest "An Unexpected Crisis" which has a number of one-on-one battles where the enemies have very basic throws and there are multiple balls on the court at the same time. I'd suggest turning your damage done down to 5% in the Accessibility options so you only do one damage per throw to avoid killing your opponent since you have to throw the ball back for him to return fire.
