Confirming you do not need to play every match, just the final and win. Setting the difficulty to Rookie/Easiest makes this much easier. I played as New Zealand and qualified for the finals, then played all 3 knockout matches to ensure I won the tournament. You could choose to play as India or Australia to make it even easier.
