The easiest way to do this is with two controllers.
Start a game & get the 2nd team to declare both innings on 0 and just get 1 run during player 1s innings.
If you have done it right it will unlock as you go back to the main screen.

Play a casual test match and make sure you bat first. Score as many runs as possible and then bowl the opposing team out for a low score. Then put the opposing team in again to bat and bowl them out again before they reach your first total. This will pop the trophy as you have beaten them by an innings because you only batted for 1 innings. For example, I made 900 runs, the opposing team made 30 in their first innings and then 40 in their second innings, so I won by an innings and 830 runs. This can be done with 2 controllers.
