For me this only seemed to count when it was a ground opponent I had knocked into the air. ( not the jetpac guys or robots)
All I did was normal X attack until they were stunned, then 1 more punch with X would knock them into the air. As they were falling back down I pressed B to throw them.
Rinse and repeat 10 times, Achievement unlocked
