Defeat 2,500 enemies in single-player mode.
This achievement requires you to slay 2,500 enemies in single-player mode. This is a cumulative achievement, and can be done across multiple playthroughs. You do not have to do it all at once.
Use the achievement tracker to track your progress, at the time of writing this solution I am just over half way there on only one playthrough. Hopefully while earning this achievement, a lot of your slain enemies are demons so that you can also unlock:
If you want to really try to grind this out, I have found one of the best areas to be the Exalted Plains region. There are a number of undead in this region that continuously respawn and give you a lot of enemies from just venturing to one area. This is especially true when you travel to Citadelle du Corbeau, where there are a TON of undead enemies.
I will continue to update this solution as I find new and better areas to farm mass numbers of enemies at once.

*UPDATE* 05/29/15: Thanks to UnsungGhost for a good tip. You can go to a Fade Rift, kill all the enemies and then rather than closing it just leave and come back later. This would be particularly effective with Rifts that are very weak, or spawn a lot of enemies.

The area that you are talking about doesn't spawn enemies for me. I think it's because I finished a mission there, or because I finished story mode.
Much unlike the "kill 1,000 darkspawn" achievement in the original Dragon Age, it is absolutely possible to meet its requirement in a single playthrough.
The areas are huge and if you explore what the base game has to offer at least once, you will unlock it unintentionally at some point. For me it happened not much after settling in Skyhold.
So, instead of wasting time and fun trying to rinse and repeat fights, move forward and enjoy the game.
You will regularly encounter enemies and participate in all manners of combat. Keep an eye open for opportunities to fight and defeat a total of 2,500 enemies to unlock this achievement.
There will be many areas where monster spawns are large, in excess of 5-6 mobs at once. If you clear the area, leave, and come back shortly, the mobs will have respawned. Do this in areas you feel are worth it to quickly rack up the kills, but do not grind this out until you have completed everything else first. There will always be enemies to fight while doing other achievements.

This is for defeating any enemy, 2500 in total. Demons also count towards this. The total carries over between playthroughs.
