@Paul Laserbeam - just go to the Tokipedia robot standing next to Fu and select any of the story missions. When you confirm it’ll give you a list of characters you can choose from and will switch to your instructor after beating it.

(The rest is to anyone else who is still kind of confused and reads the comments of this solution)

This is essentially a mission select for the Extra Story centered around Fu where you choose your partner from a list of your instructors. Do all of them for one mission and move on. It’s very time consuming like any grind in this game...

Each mission has it where you need to complete it as one of the listed names. On the left of each mission in the Tokipedia screen is a space where you can use any fighter to get that one checked off (as long as they aren’t already listed for the mission). By example when doing the Fu branched storyline if you make him your partner each time, you will have a glowing line through the left hexagon indicating you’ve fulfilled that.

Just look at the glowing lines and lit up hexagons ..that’ll tell you what you still need to do.

Slight typos like Gotanks instead of Gotenks and Gokue instead of Goku, but otherwise a pretty clear little guide.

The only thing is I don't see how to replay these missions (seeing as we can't bring every character with us on the first run through) but I'm assuming the game will tell me when I finish that first run. +1 from me.

No one gave me this advice, but I’ll give you this advice: to beat Ultra Instinct Goku (when Goku is your partner in Champion for Change), which is I think the hardest fight in the game, my character was max level with a lot of health and ki focus. Literally, I just spammed Super Spirit Bomb ultimate ability until I won. You can take damage, but he can’t stop you, so you can keep dealing damage. Also, equip Energy Capsule L and Z and Aura Capsule L and Z battle items to restore health and stamina. I also have Super Explosive Wave evasive skill. Blaster Shell and Dodon Ray ki super attacks may also help you before or during UI Goku.

Yooooo @Pistol 101 this is great advice. In fact, if you have the Haaaaaaaaaah!! Super Soul, you can literally just spam Super Spirit Bomb over and over. Took less than 7 minutes for the entire fight. Just be careful, as you charge your SSB, Goku can still inflict damage to you. I'd say to use all Energy capsules (S, M, L, Z) as your 4 battle items and heal after the SSB animation is finished but while it is still attacking Goku.

For anyone who is still struggling to get this achievement this is what you have to do if you think it's not working if it says 80% on certain missions what you have to do is you have to play a mission with a character who is not connected that mission because apparently the game does not count it as a 100% unless you do it with a character that's not related to the mission because I was stuck on this achievement for literally a year or so not able to figure out why I wasn't getting it it's also recommended do not play with the DLC costumes on because for some reason it bugs that out and

because it's not consistent
use characters like Ginyu or tien or kid gohan if they are not connected

but use some other characters

The quickest way I go about being ultra instinct goku is with a keyboard and super destructive disk It is unblockable and does a lot of damage

For End of Conton City, why isn't Vegeta not included as when you look in the Tokipedia, Vegeta is between Nappa and Zarbon also why was & Videl not included in the Gohan part because aren't Gohan & Videl not a duo, I mean isn't this something you should do with every instructor or are those instructors I mentioned be excluded from that fight with Dabura and Majin Buu, also why is Fu included in the End of Conton City fight, how do I unlock him as a teacher?

Requirement - Acquired nickname: ∞

The base of this achievement ties directly into the "Revere Him! Praise Him!" Achievement, so it is highly beneficial to unlock that first so you can unlock all of the pathways of the Tokipedia. To speed this achievement up ever so slightly, while unlocking this achievement, you can select any of the required characters listed below and that will count towards the Tokipedia's completion.

To Acquire the nickname: ∞, you will have to get 100% completion of the Tokipedia and to do so, you'll have to complete each scenario that you unlocked multiple times with different specific characters for you to choose to accompany your CaC.
It should also be noted that any customizations made to a partner will automatcially be selected when selecting your partner for each scenario.
The characters required for each scenario's total completion are listed below and as follows:

This requires 100% in the story content, which means doing all branching paths, all alternate paths, and finally a single generic path which is any one not listed as branching or alternating the mission. The Tokipedia tells you outright who alternates the mission and shows you a darkened image you can easily tell who it is for the branching.

A couple of things:

There is no need to go back to town to swap out instructors as the Tokipedia allows you to swap them there.
To save time, make sure to use Kid Gohan/Nappa/Zarbon/Dodoria/Pan on one route, and then switch them out for another listed option for the other route. This will fulfil the generic mission requirement for each mission and 100% two characters who get little friendship boost via the required missions to 100% the content.
Fu is listed for the second to last mission, The End of Conton City, as being required. To unlock him for use in that mission (and the rest on the Fu route, though using him in those is not required), complete both routes.
If you wish to see what people see then make sure to mentally note down when the instructor character speaks so you can skip all dialogue till then and skip scenes that don't have them speaking. If you don't care then simply skip all scenes to save time; you've seen them already after all.
A Frieza race character who can turn Gold will speed this up heavily. Simply go Gold and spam the charged Ki Blast for massive and quick damage. Use the Super Soul, I'm the Universe's Strongest (clear PQ 21), for more damage.
Whis, Cooler, Android 16, Future Gohan, and Bardock are required and they are DLC instructors oddly. Thankfully the Mentor Pack they are in is free to download.
Total amount of missions required for 100% is 102.
