How to unlock the The Specialist achievement in Dragon's Dogma 2 - Definitive Guide
This is awarded when your Main character reaches Rank 9 in any Vocation.
Raising vocation is DCP related, not XP. DCP is Discipline, the "XP" of vocations. As you gain DCP, your vocation ranks up, and DCP is also what you use to get vocation skills (and vocations themselves!).
If you want to purely boost vocation, I suggest taking the route from Melve to Vernworth on foot at night. Kill every mob you see.
If you see a big baddie that has a health bar on the top of the screen, ignore them, they are a waste of time if you are purely boosting vocation, because they only give like 150 DCP, when a small single enemy gives like 20 and can be killed in a few hits.
Once you reach the other end of the run, enemies will respawn after a few days (it could also be linked to whether or not you rested). I also rest at ever campfire cooking a aged beast steak or aged scrag of beast, to keep the buff going and to earn towards the pawn badge.
I reached rank 9 on my Pawn first, and this achievement didn't trigger. That is either a bug, or intentional design. If in a similar situation, get to rank 9 on your Main character and it should trigger then.
If anyone reaches rank 9 on the Pawn first and triggers it, please let me know in the comments.

Is there any specific thing you can do to level this faster? I'm level 26 and have been stuck at fighter vocation 7 for a while. Is it just XP related?
