A Drake can be found anytime near devil fire grove and also the chamber of fate in the ever fall post game.
The wyrm can only be found post game at the water gods alter in the last area or the chamber of distress in the ever fall.
Wyvern can be found just outside gran Sorens south gate or the blue moon tower at the top only post game.
There are a few other areas for these enemies to spawn also.

If you go to the Rotunda of Dread in the Bitterblack Isle, it's located across the broken bridge at the Duskmoon Tower: you can fight all three at the same time.

My "History" log says I have killed one of each... no achievement.
I just popped it after killing the wyvern flying around the north of Grand Soren in the post game. I had already killed the one in Bluemoon tower but that didn't make the achievement pop.
My only possible explanation is that the first one didn't track in the achievements because it instead registered as a notice-board quest finished. Other than that, the tracking is just random and crappy.
