You will unlock the fish matching minigame after your second date with Brian. Load it up from the main menu and keep plugging away until you unlock this trophy.

There's a lot of luck/RNG involved with this trophy, so there's not a whole lot of strategy I can give you. Try to match more than 3 at a time to drop rainbow trout. Rainbow trout, when put in a matched set, will obliterate the entire column/row it's in, giving you bonus points.

The fish all look very similar, which makes this trophy more frustrating than it needs to be. Just keep trying.
